Bacon Battered Chicken

I'm just all kinds of making stuff up this week!   Kids needed dinner but rob and i weren't uber hungry. I had two chicken breasts, and about 30 minutes till our normal dinner time.... So lets just make something up!!

Chicken breasts
Bread crumbs {i use italian cause i like them}
Bacon grease
Box of scallops potatoes {for faster meal, but homemade woulda been sooo much tastier}
Green beans
Almonds

(butter, milk, garlic)

DINNER!!

Start heating the bacon grease in a frying pan on medium heat.
Thaw and cut up chicken into small cubes. Toss with bread crumbs.

Heat up water and mix up the potatoes {i did stove top just to make the meal cook faster}

When the potatoes get covered {or in oven} Grease should be warm enough.   Throw in breaded chicken and cook um up!    Turning so each side browns and meat cooks all the way through. I turned the heat up a little here cause i'm impatient lol

In smaller pan add Almonds and small amount of butter {i used a garlic butter mixture} let them heat up with the butter while its melting then add cut green beans.   Stir till its all coated and let them heat up together in the pan.

By time the potatoes are done, so is the chicken and my beans were heated.   VOILA!   Good meal for the kids!

Not the HEALTHIEST cause of the bacon grease, but the flavour was good and there was no need for other seasoning!

Quick and Easy Veggie Soup

K so i was hungry for lunch, but didnt want a sammich, i was in the mood for cooked food but didnt want a lot of prep. so heres a soup thing i just made up really quick, thought someone out there may like it so i'm sharing.
this was for my small pot, i only made like two servings, use more of everything for family size. But i'm a sahm so i just needed lunch for me :)

Onion, broth, celery, seasons, veggies, noodles or rice, package of bisquits.

Cut up some white onion and celery {about 1tablespoon each} and simmer low/medium with a little butter in the bottom of pot.
While that simmers, preheat oven to package directions, and put bisquits on cookie sheet. {if you have one of the ones with the double bottom with air pockets, its awesome, no burning like ever lol.}
Add a little water to pot, about 1 tablespoon, just to mix seasonings in.
    I used unmeasured amounts of celery salt, black pepper, garlic, a little paprika, chives, bay leaves. I prolly would have added thyme, but i didnt have any.

I added my veggies here, before the broth, to mix with the spices. (thanks taste of home for the tip lol)   I just added Carrots {about 1/2 cup}, cabbage{1 cup cuz i like it}, and baby corn {1/2 cup}.   But I'm sure broccoli, cauliflower, squash, snap peas, ANYTHING would be good in this.
Oven should be preheated, if not its ok, keep waiting, but if its ready pop those bisquits in!

After veggies have a good coating of the seasoning, add your Broth.
   I used chicken broth, but using a veggie substitute makes this meal completely vegetarian!!

Add broth till theres about an inch of it OVER your veggies, or higher if you like a more brothy soup. Add noodles {1 cup} OR rice {3/4 to 1 cup}   If your using rice, you may want more broth as it soaks up.

Whether your oven preheated or not, put the bisquits in. they'll be done with the soup :)
Raise the temp to high, taste/smell the broth and add seasonings as you like. Set the timer for the Bisquits.
wash your prep stuff, like knife, mixing spoon, chopping board etc.   you have about 10/15 minutes.
When the timer goes off check the rice/noodles   If they're done your soups ready!   take the bisquits out and eat.

Its not the BEST soup in the world, but if your home alone and want cooked food but dont want alot of prep, here you go.   chopping the onions/celery is the hardest thing, everything else is done while its cooking itself.
and the bisquits are good for dipping in and soaking up the broth :)

If you like it or no, all well.   At least its here for me to remember lol

Obama Wins Nobel Peace Prize....Why?

Ok, Nothing against or for Obama here. This little rant and rave is about the committee not him.   I am not talking bad or down about him, I'm just amazed at this story. I am wondering why he was even considered.. well here's my answer:

"to encourage his initiatives to reduce nuclear arms, ease tensions with the Muslim world and stress diplomacy and cooperation rather than unilateralism."

that was the reasoning behind giving the man a NPP......   Ok thats great but umm.. aren't you supposed to have made Major steps towards peace ALREADY and brought about positive changes. Yes he changed American history, and is TALKING about ways he wants to change the world but... he hasn't done it yet.   I didnt know they gave these awards out like gold star stickers to encourage good behaviour.

"You have to remember that the world has been in a pretty dangerous phase," Jagland said. "And anybody who can contribute to getting the world out of this situation deserves a Nobel Peace Prize."

  If I spent all my money and organized a ... lotto winners for peace organization, but we never did anything, we just talked about what we should do. We did go to the UN and other governments and proposed ways to help out other countries, but we never did anything.... in fact we sent our sons overseas to add to the fight while we talked about making war stop... would we get one?   Cause we're contributing to making the world better, we have initiative.

I think that its great he was considered and I'm glad that people aren't laughing at the US anymore, but are they instead laughing at the NPP committee now?

President Obama was nominated for the Nobel Peace Prize less than two weeks after taking office earlier this year.

Ok wait wait wait... two weeks???   In two weeks what had he done to deserve that nomination??   So we're now supposed to nominate people BEFORE they actually do anything, based on things they SAID they want to do?
In two weeks he had started things rolling but nothing was set in stone, nothing was making its way around the world. Who nominated him? Does he find out? maybe they wanted a shiny new position at the white house and tried to butter him up.

Jagland said the decision to honor Obama was unanimous. "It is an award that speaks to the promise of President Obama's message of hope."

Thats not that amazing when the committee was only five people. but again, i didnt know that they had decided that you can just have good intentions, and they'll give you the NPP as a way of saying, "we like what you said, please continue to say it.   Maybe one day someone other then us will listen and the world will be better"

Were there really no other people working for peace right now? Was there no one else in the WORLD that maybe deserved this? oh wait....

Until seconds before the award, speculation had focused on a wide variety of candidates besides Obama: Zimbabwe's Prime Minister Morgan Tsvangirai, a Colombian senator, a Chinese dissident and an Afghan woman's rights activist, among others. The Nobel committee received a record 205 nominations for this year's prize, though it was not immediately apparent who nominated Obama.

"The exciting and important thing about this prize is that it's given to someone ... who has the power to contribute to peace," Norwegian Prime Minister Jens Stoltenberg said.

OOHHHHhhh i get it... umm... no i dont.     out of 205 people who are also nominated, not one of them had power and actions to their merit?

I understand that Obama does want things to change. I understand that he may make the best prez in history, bring peace to the world, and end hunger and wars forever.... unlikely but hey it could happen.... but proposing things and saying how he would like things... I dont believe that deserves a Peace prize.
Mybe in the future yes, he would be a prime candidate to receive the recognition, but not right now.   I think they should have waited to see what he follows through on, and what he does.

And thats all I have to say about that.
Haha I may be wrong or right and I'm sure someoen will tell me that i need to do more research to see all the great things Obama has done... blah blah blah.
Its a World PEACE prize, not a change American History prize.   and I just thought you got it after Acting towards making the world change. after you put time and effort into persuing ...... that doesnt look spelled right....... that goal, not just proposing it.

ANYWAY let the hate mail begin lol

I've had nothing to write till now

What many dont know is that, yes i quit my day job, BUT i had no Word program!!    My old computer had a kick ass program that came with it, so i never had to buy new word processing software.   When i got a new computer for my birthday it had a new hard drive.... but i couldn't transfer the software because blah blah blah

I had no word editing software on my new computer.   so deal with it right? Well.... my laptop was out of commission. My dad had it, switching it to linex or something for me.   Hubbies laptop was out because he was in the process of upgrading it and it was in pieces.   HIS desktop was out because he has no word software other then notepad.... yeah   i was hating life.   I had my typewriter, but while that lets me write, it takes time to get it together, i can't just thumbdrive transfer it, and COOL i have a hard copy... but no backup...   so I was a sad sad writer.

BUT i have my laptop back. I am on it right now as a matter of fact... and it DOES have a word editor :)    I am loving life again.   My fingers are starting to go tingly from typing so fast.   Granted sometimes i go really fast and typos abound, but at least i'm writing.   I'm happy.   the house is even cleaner!   i make myself clean before i can write, so i go crazy trying to get my coffee and pixel fix.

So what i've been doing is going through all the files on my thumbdrive. Opening them up and rereading since i haven't seen them in months.   deleting doubles, debating doubtful dialogues, and delivering new days to devious dames and dudes..... haha   Alliteration, gotta love it!

But some of the most fun i've been having?   Writing book two of my first series, and discovering the characters in my second series.   I just wanted to update, even though its highly probable no one reads this anymore since i haven't had anything to update in awhile.   I'm gonna go back to writing now :)

ps. i do miss blogging and poetry and that, hopefully i'll figure out my new schedule and find time to keep going. so check on back :)   maybe i'll get an agent who really pushes my book and next year you can read that as well as my blogs.

I wanted to make sure we didnt have a baby rattler and have to search out a nest... *shiver* But all signs point to non-poisonous so its alright.

{And then it Exploded!}

When I was in Mascoutah High school I had to take Communications with Mrs. Z.   {twice haha} One of the things she taught us about were, Explosion words.   When a word is said it may cause an explosion of thinking in a person.   Your brain connects it to something else and you begin to think about that other thing instead of what the word really meant..... or something to that effect.
Well last night I realized that MY brain reacts to Everything like an explosion word.   Sometimes I have to backtrack my thought process just to get back to a conversation.    And the last thing i thought about had NOTHING to do with the original line of thought.
After I realized that I started laughing and could only think of peter griffin.
"Do you even listen to yourself while your talking?"
"EH, I drift in and out.."

So heres the thought proces that lead me to this conclusion. Last night Rob says something about our cooler not working or something because it's warm in the house, right before bed.   So theres no distractions and I start thinking about the cause of Heat in our house.:

Starting with the cooler and system itself I think about the heater, is it turned off completely?
Has the control been turned up?
The pilot light Did go off right?
I wonder if its something else?
Did We cook big meals Everynight since the cooler went on?
What about Max's Heat lamp?

I think thats a 100 watt bulb.
I had to replace it last year what was it?
wow last year he was tiny.
I need to take new pictures of max and me.
He's so cute.
Except when he falls asleep and looks dead.....
I hate it cause it makes me want to shake the cage.
Maybe I could just yell.
MMMAAXXXX   hahahah
I wonder if high pitched screams still send off ground vibrations like a low mans rumble?
like if I yelled at max would he feel it on the ground of his cage?

If someone were laying on a rail road track listening, and I screamed miles away would it reverberate to them as a whisper?
Wow being tied to the train tracks musta sucked.
Like old westerns, they thought of some crazy ways to kill people.
like that guy buried in the sand.

Yeah thats my thought process, that was a small sample of what it's like to live inside my head. I just felt like bloggin in for prosperities sake, or something..... dont ask my to think of something snappy.   I'll just end up in a five minute daze while my brain explodes.

A day -poem-

Wake in the morning, still yawning
kids already up, day is dawning.
Brush teeth, hair, rub my eyes
shuffle to kitchen, coffee and sighs.

Bus stop standing, watching the time
wave goodbye, a few minutes all mine.
Check email, myspace and play,
Then off to get dressed for the day

Drive to work, red lights stopping me
Park, wash lettuce, start making tea
Unlock the door, open the sign
Turn on that smile of mine

Finish the rush, sit a spell
Quick lunch, laugh, stories to tell
Back to the dishes, clean up the store
Drive home to work some more

Take off work shoes, a second to sit back
Bus tires stop, time to make a snack
"Go play for a bit." I wanna rest
try to find something to relax me best

Watching tv, few more minutes for me
Kids come in, tummies hungry
Make dinner, get to sit and eat
Back to dishes, more sore feet.

Make sure Homeworks done, Pets fed
Brush your teeth, it's time for bed.
Goodnights and hugs, giggles and a kiss
One of the few things I'll never miss.

House is silent, just lay and relax,
Oops forgot laundry, trip on backpacks
Go take a shower, warm water falls
want more time, but sleepiness calls

Crawl into bed, so warm and comfy
Feel dreams start to pull me
Wait, get up, put clothes in dryer
make sure the dogs in and nothings on fire

Finally all lights are off, refuse to leave bed
cuddly up cozy and worries leave my head
Stress leaves as Dreams wash like rain
Moments of insanity till life calls again.

No i dont always feel like this, and actually I havent had a day QUITE this bad. as in i havent tripped on backpacks AND forgot laundry on the same day.... but i have done both. hahah

Just felt like writing something rhyming and funny, so decided to put a working mom poem out there that could make people laugh, or maybe even relate and know someone else goes through it to. Just thought it'd be cute :)

Laters all..... I gotta figure out what we're doing for dinner.

wow been a long time!

If anyone was wondering where I'd dissapeared to, it was my house.   Life sucked me in and chewed on me for awhile and my broken fingers wouldn't let me type.... yeah
No Back in December Rob got home from Korea, we had xmas, vegas, new years, Work, St Pats, Work, Birthday, work, birthday AND easter, work.....   see a pattern?
But i'm trying hard to start getting back on here and been visiting blogs, slowly commenting on pictures, workin my app's, bringing my poker game back, slowly reintegrating myself into the inet :)
I've been writing almost no poetry as I've focused more on my books. But I stopped sending out request letters to agencies.    No one wants to publish new Fiction authors right now and I'm tired of wasting stamps and paper.   So i'm just gonna work on finishing book 2, and book1 of the new series i'm starting.   I'm thinking of taking some more college art classes so my illustrations for the kids books look better.
Just wanted to kinda update everyone on whats up cause I havent been ON here for a long time.   In fact 5 months on myspace is like years in real life right? ;)    so no i didnt die, I was not abducted, I didnt join a cult, I Did dye my hair though......
I'm gonna go get to work, but i promise i won't let it keep me away hahah   I'm gonna start working more, and was thinking about starting up the monthly challenge again.   Kinda start my own creative wheel turning and bring some of you along for the ride.
