Bring your art...whatever in the world it is and share it with everyone this Friday at Freeze Peach Cafe from 830-1100. If you write, bring some words. You play some music then play your worst. If you're an artist of any sort. Bring it in. We're doing an experiment and we want you to be the first.

We used to call it OPEN MIC until the loincloths came off and we realized that every one has some funny words to sell. Now the mic is live and hot and the space is active.

The word on the street is getting louder. Nothing is toned down. Nothing is limited. Join our lab rat movement. A free secret will be given to all who come. Think of them as messages from fortune cookies. Bring some of your words, art, music, theater in exchange or bring a good sense of humor and money.

Monday night.

VEG (ve-jh) is on. Fran woman's the dj booth. Starts off her show with some cuts from the Beatles 'White' album. Revelers pass around the portraits of Ringo, etc that came with the album. There is a poster inside with a collage of the members of the band in various stages of undress... hotel scenes. Ruffled shirts. Dancing at parties.

Next it's Herbie Hancock. Fran is switching back and forth btw. Beatles and Jazz tracks.

Also present at the cafe - Casey, studying as usual. (Stayed up all night cramming for a test this morning.) Is that Chamomile tea she is drinking! Maybe tonight's plans include some rest..

Several new faces. Reading. Everyone in front o f a book instead of a computer screen for a change. The only typing sounds come from my own keyboard - writing this post. Oh, and Volunteer Barista Carly behind the main counter. Probably posting on her own myspace blog... promotography

Fran is switching records now. Back to the Beatles... weird. A Beatles song nobody knows all the words to... 'Martha My Dear'

Casey orders more tea. 'Deja-vu' (Decaf Van, Jasmine, Sage)...
-sound of pages of a book flipping, Carly opens tea jars, clackety clackety clackety clak... my keyboard clicks away.

new to lift this week - 'Chiang' who has opened a CHINESE GONGFU TUI-NA studio on Ditmars just up the street from the cafe. Chiang (sp?) practices reflexology, among other healing arts at the Astoria location. Check out the shop at 29-28 Ditmars Blvd.

Before you go dumping another deli-grade off the shelf 'iced tea beverage' down your gullet this summer pause for a moment to think...

What does my body really want...

What is the difference between fresh made to order iced tea... like the kind we brew at Freeze Peach every day...

...and tea that lasts for months inside a glass jar on the refrigerator shelf in your local convenience store.

Freshness.
Quality.
Lift...

Freshness.
Here is an experiment.
Brew some tea.
Taste it.
Now let it sit for a few hours. And taste it again.
You will likely notice a remarkable difference in flavor.

Sometimes tea changes for the better with time. (Like Rosegarden... It mellows, Especially if you keep it in a closed glass container overnight...)

Most of the time though, Brewed teas oxidize and lose their bouquet. Become flat. Taste stale after only a few minutes.

In general, I would say, 'VIBRANCY' a word I use to describe the complexity of a tea... (the number of distinct flavors) diminishes with time.

Quality.
When you read the label of the deli-grade tea drink container and it says 'sugar' what does that mean. It could be any kind of sugar. Ultra refined bleached white sugar produced with extensive use of chemical pesticides and fertilizers to pure organic sugar-cane molasses. You have no idea what's 'in there.'
The same goes for the actual 'tea.' How long did the dry tea itself sit around in a pile on the floor waiting to be brewed. Maybe the people who were storing it didn't keep it dry and part of it re-fermented and was dried a second time. Maybe the tea was stored in the open for such a long time that it lost most of its flavor.
You can't be sure.
When you come to the cafe you can see the quality for yourself. You know exactly what is going in every cup.(Or mason jar.)
You can see the fresh color of the chamomile. You see the spent tea. You can even pop a coffee bean in your mouth right out of the grinder before you ask to have a cup brewed.

Lift...
What is that... (aside from the name of the cafe's weekly Saturday night candlelight tea social!)
Someone you can talk to actually makes your tea. Not a machine.
Every time a tea gets brewed at Freeze Peach it comes out a little different. And once in a while a tea gets brewed that comes out not just 'good' but especially good. Like put your cup right down and pause after you take the first sip good. LIke 'DAMN, that's a good cup of tea' good.

We don't pre-measure tea. We don't ask baristas to weigh tea. 'Lift' has something to do with the way teas HAPPEN.It is the human touch. It's the 'sixth sense' of a barista that it takes to brew green tea that isn't bitter. It's knowing when to add that little cold shot of water to bring down the temp to capture the gentler tones of a blossom tea.
Lift.

So. Ask your body what it really wants.

If it wants tea. Come to the cafe and let us brew you a cup.
