Snack Wisely

Hectic schedules make snacking a common practice. Choosing the right snacks can be extremely supportive. Proper snacks can provide energy between meals and help prevent overeating during scheduled meals. The following snacks are all good choices:
• Almonds
• Popcorn (fat free or air popped)
• High fiber cereal
• Beef jerky
• Nuts
• Olives
• Dry roasted edamame
• Pickles
• Whole wheat pretzels
• Dried Fruit
• V8 Juice
• Green juice

Westerterp-Plantenga, Ph.D., a professor of food-intake regulation in the department of human biology at Maastricht University in the Netherlands.

Sensible (and delicious) Spokane Dinners!


January 26th, 2009 ..


Having trouble coming up with a fancy Spokane Dinner, and stuck going out to Spokane Restaurants? Bring out the big guns and create a meal that will rival anything served at the Spokane Davenport, and not break your pocketbook or your Spokane Diet resolutions!
Beef with Rosemary Mushroom Sauce:
1 (8oz) package pre-sliced mushrooms

1 cup dry red wine

1 lb boneless top sirloin steak (about ¾ inch thick)

Cooking spray

1 c chopped green onions

¼ cup chopped fresh parsley, divided

1 ½ tsp chopped fresh rosemary (or ½ tsp dried)

1 tsp balsamic vinegar

4 garlic cloves

1 10 ½ oz can beef consommé

1 8 oz can no-sodium or low-sodium tomato sauce
Directions:

1.Combine Mushrooms, wine, and steak in a large zip-lock bag; seal and marinate in fridge for 30 minutes, turning occasionally.
2.Remove steak from bag, but reserve the marinade. Cook steak in a non-stick pan coated with Pam over medium-high heat until desired doneness. Turn after about 3 minutes on one side. Remove from Pan.

Food Label Detective

Labels can help you make healthy choices but can also be confusing. Here are some quick tips to help read food labels:

• Serving and calories: this will help you determine serving size and calculate the amount of calories you are eating

• Fat: pay attention to the types of fat in the food. Good fats to look for should be Polyunsaturated and Monounsaturated fats. Saturated fats are NOT healthy for your heart. Avoid this type of fat or limit your consumption to 1 gram per day or less. Another fat that is safe to consume is hydrogenated or partially hydrogenated oils.

• Cholesterol: This is not healthy for your heart. It is important to remember that ALL animal products contain cholesterol. Aim for 300 mg or less per day.

• Sodium (salt): 75% of the salt we intake is from processed foods. If you are eating a lot of salt, try to look for foods high in potassium which will counteract some of sodium’s effects on your blood pressure.

• Total carbohydrates, Dietary Fiber, and Sugar: don’t focus on total carbs. Total carbs include the good and the bad. Instead focus on the type of carbs and complex carbs are best.

• Fiber: Choose foods rich in fiber like whole grains, fruits and vegetables. You need 25 or 20 grams per day.

• Sugar: Sugar contributes a lot of calories without any nutrients. It is truly an anti-fat loss contributor. Sugar should be 10% of your total daily calorie intake.

• Calcium: Choose foods that are high in calcium. (Milk, cheese, yogurt, soy products, salmon and broccoli are all good choices.) You need 1200mg a day.

• Percent DV: Let the Daily Value be your quick guide to all the numbers. This will help you determine whether a food is high or low in nutrients. Look for foods with 20% DV, these are high in nutrients.
