I would like to remind everyone that "Chickasha Oklahoma Legend" Grandmother Vera's Recipes that are posted here can all be viewed on one page in the blog's archives at:
Baked Grits and Cheese
2 cups water - 1 cup uncooked corn grits 1/2 cup evaporated milk - 2 Tbs Oleo 1 1/2 cups cut up cheese 3/4 tsp salt - 2 eggs
Boil water. Slowly stir in grits. Cook and stir until thick (1 or 2 minutes). Stir milk, oleo, and most of the cheese into the grits. Beat eggs and stir unto the grits. Pour grits into greased baking pan and sprinkle rest of cheese on top. Bake at 375 degrees about 35 minutes until knife stuck in center comes out clean.

Here's a new recipe from out of the bag that "Chickasha Oklahoma Legend" Grandmother Vera gave Dad before she passed away...
Soft Raisin Cookies
2 cups raisins - 1 cup boiling water 3/4 cup shortening - 2 cups sugar 3 eggs - 1 tsp vanilla - 4 cups all purpose flour 1 tsp baking powder - 1 tsp baking soda
1 tsp salt - 1 tsp ground cinnamon
1/4 tsp grated nutneg - 1 cup chopped nuts
In small saucepan, combine boiling water and raisins. Cook 5 minutes and set aside to cool.
Cream shortening and sugar. Add eggs and vanilla, beat well.
Sift togtaher flour, baking powder, soda, salt and spices. Add alternately with raisin liquid to creamed mixture. Stir in raisins and nuts. Chill dough overnight. Drop by teaspoons on greased cookie sheets and bake for 12 minutes at 350 degrees. Enjoy!

Here's a new recipe from out of the bag that "Chickasha Oklahoma Legend" Grandmother Vera gave Dad before she passed away...
Fiesta Tacos
1 pkg large taco shells
1 lb lean ground beef - 3/4 mild salsa
1 can (14.5 oz) diced tomatoes with chiles
1 can (15.25 oz) whole kernal corn, drained
Prepare taco shells according to package directions.
Brown meat in skillet and drain. Add tomatoes and salsa and cook over medium heat 7 to 9 minutes, stirring occasionally. Add corn and cook for 2 minutes.
Spoon into heated taco shells and garnish with shredded lettuce, shredded cheese, avacado, or sour cream, if desired.

A few weeks ago I wrote that I will probably give more of my opinions, and...
With the actual year of the US Presidential election rapidly approaching, I've been taking a close look at all of the Presidential candidates and have been frustrated, so frustrated that I have considered making a Kinky Friedman ("Why The Hell Not?") vote in the Texas Republican Primary for Ron Paul...
But seriously, after giving it some more thought, I decided that more than anything else, the United States needs a leader as it's President, so I am endorsing the candidate best qualified to lead this great nation...
As a matter of fact, I even made a donation to his campaign to get some of his yard signs...
I hope that everyone has a really Great Week and if you are going to drink, please don't drive, take care and God Bless....Mikey

Here's a new recipe from out of the bag that "Chickasha Oklahoma Legend" Grandmother Vera gave Dad before she passed away...
Spicy Rice w/Black-Eyed Peas
1 can (15oz) black eyed peas, drained 3/4 cup uncooked instant rice 1 chopped medium onion - 1/4 tsp salt 1 tsp dried oregano leaves - 1/8 tsp cayenne pepper 1 finely chopped garlic clove 1 can (16oz) whole tomatoes, undrained
Bring all ingredients to a boil in a skillet., breaking up tomatoes and stirring frequently. Reduce heat, cover and simmer about 10 minutes until liquid is almost absorbed.
