Spicy found this great recipe when his boat broke down in Kingston, Jamaica. This is a very spicy crab recipe that Spicy says he loves to make on Sundays with a couple of cold Rum and Cokes.
Ingredients:
3 lbs. cooked crab claws 1 cup minced scallions (green onions) 1/2 cup chopped parsley 2 celery ribs, chopped 3 garlic cloves, crushed 1 cup olive oil 1/2 cup tarragon vinegar 3 tbsp. lemon juice 1 tbsp. Worcestershire sauce dash of Tabasco and ..dash of chipotle salt and freshly ground black pepper, to taste
Directions:
Buy baby crab fingers from fish market. If they are frozen, let them defrost and wash and drain well before using.
Heat remaining ingredients in a saucepan; add seasoning to taste. Pour over the crab. Cover and refrigerate overnight.
Remove from refrigerator 1 hour before serving. Drain off sauce. Serve crab claws with buttered black bread. Super as cocktail fare. Makes 6 portions as a first course or 24 portions for cocktail buffet.

I am known in all parts as a ’Sun’ of many talents..and I always found it interesting that my best writing comes from my relationship with Cocoa. She is my air, my night sky...ahh..but thats another story!
I wrote this when I first laid eyes on her soul:

"This is one Grand-daddy of Spicy beef recipes that you have to try! I came across this dish while traveling the jungle waterways of Cambodia looking for my lost love, Cocoa. My guide there in Khmer Krom says that it is such a delicacy, the folks saved it for weddings and big celebrations. I almost died on that trip, so you better try it and tell me what you think!" - Spicy 2008
Ingredients:
*½ lb sirloin beef, sliced thin *1 Tablespoon fish sauce, or soy sauce *1 Tablespoon fresh or frozen minced lemon grass *1 Clove garlic, minced *1 Teaspoon sugar *2 Chili pepper, minced (option) *2 Tablespoons All purpose flour *1 Cup vegetable oil for deep fried beef *½ Cup orange juice *½ Cup water *½ Tablespoon fresh lime or lemon juice *1 Tablespoon light brown sugar *1 Teaspoon salt *2 Tablespoons cornstarch *1 Small yellow onion, sliced *1 Red or green bell pepper, sliced *½ Head of lettuce, chopped *A handful of fresh mint leaves
Procedures:
In a large bowl, put beef with soy sauce, lemon grass, garlic, sugar, and chili pepper together, mix well, add flour, mix well and set it aside. Pre-heat oil in a skillet or wok with high temperature.
When oil is hot, deep fry marinated beef till it crispy. Remove fried beef from skillet, put it on a paper towel covered plate to drain excessive oil. Pour remaining oil still in skillet out, but keep approx 1-tablespoon oil in the skillet for making sauce. In a small bowl, mix orange juice with water, limejuice, brown sugar and salt and cornstarch together, mix well and set aside. Heat up same hot skillet on the stove, add onion and bell pepper, sauté till onion soft. Pour prepared orange juice over, stir till sauce thickens.
TO SERVE: Put chopped lettuce on center of a plate, add fried beef on top and pour orange sauce over. Top with more lettuce and mint leaves and serve immediately. Serve as appetizer *mahope-sar* or with rice.ENJOY!

When I met Spicy...he was in the middle of blending a new seasoning! Man, this sun is always working!!! Now mind you, I can't tell you everything about that night, but he left a smile on my face and a warmth in places that are still tingling...
Anyway..back to the seasoning....filled with herbs, onions and garlic..its delicious and ready to package...so 'be on the lookout' for a new blend, his take on a French herb seson mix....wi-wi!
Until then, please enjoy this dip mix, made with Spicy Sun Dips:
Crab Vegetable Dip
1/2 c chili sauce
1/2 c mayonnaise
1tbl. Spicy Sun Seafood Diablo Dip mix
1/2 ts dry mustard
1 ts worcestershire sauce
1 tbl Spicy Sun Orange Sunset Dip mix
1/2 ts salt
1 boiled egg, hard, chopped
1 c crab meat, drained
Mix all ingredients together and let sit overnight. Serve with crackers or veggies...

Over the years Spicy has been to many parties…and has hosted them…oh the stories!!! The recipe was given to me by Spicy himself, his Bash Punch, guarenteed to bring the life back into the dead…LOL (at least thats what he said)..I just think its good…! Add some fruit and you have a bash your guests will love so much, they will start to hear the steel drums in their head….lol
Spicy's Living Dead BashYield: 75-80 4oz. glasses

1 Qt Grenadine |
1part Bacardi 151 |
| 3 Qt Lemon Juice |
2parts Light Rum |
| 2 Pint Triple Sec |
2parts Dark Rum | ..>
Mix ingredients throughly. Chill with large cake of ice in punch bowl, letting it stand an hour or so before serving.
I believe its time to Party!!! ENJOY!!!

When I first heard of the Adventures of Spicy..I had to meet the man behind the party….I was told he lives on an island somewhere in the Caribbean. I quickly went through some friends, and was able to get his email address.
I emailed him a very provocative note..It said: "I want to sit on your rays and feel the warmth of your sun….Little did I know that note would be the beginning of a great friendship.
As soon as I met Spicy, a warmth came over me…this handsome, hot-looking spice pirate, had lived such an interesting life, that I knew I wanted tell the world about him. After we met, I was privileged to be the one who brings his adventures to life!
Across the world, people will step forward and talk about the Sun Behind the Spice.
There will be videos to watch, recipes to take and saucy stories to tell! Look to the future says Spicy...beyond the horizan lies a great party..waiting to happen!!!!!!!
