During menopause, cholesterol levels can rise, increasing a woman’s
risk for heart disease. While you’ll want to talk to your doctor, there
are some things you can do to help you reduce your heart disease risk:
Replace higher fat proteins with leaner options or vegetable
alternatives, such as soy, to help keep saturated fats at a minimum in
your diet. 8th Continent soymilks provide a good source of protein yet,
are low in saturated fats, have zero grams of trans fat and are
naturally cholesterol free. Limit saturated fat as much as you can. It’s the thing in your diet
that effects blood levels of LDL cholesterol the most. New American
Heart Association guidelines recommend keeping saturated fat to less
than 7% of your total calories for the day. Watch your intake of trans fats which can impact cholesterol
levels, too. They’re found in hydrogenated fats and oils like stick
margarines and often in baked goods. The American Heart Association
recommends keeping trans fats to less than 1% of total calories for the
day. Limit dietary cholesterol to less than 300mg per day. Cholesterol
is found only in animal products. Soy is naturally cholesterol free.
Know what your blood cholesterol levels are. Adults over 20 years old should have their cholesterol checked at least every five years.
If you have high cholesterol already you will need to get it checked
more frequently. For women optimal blood cholesterol levels are:
Total cholesterol: < 200 mg/dL LDL cholesterol: < 100 mg/dL HDL cholesterol: > 50 mg/dL

This recipe was submitted to our website by a fan. Try it! It is delicious!
Yummy Summer Omelet
2 tablespoons Heart healthy margarine substitute
1/3 cup chopped green onion
1/4 cup chopped bell pepper (I prefer to use all three colors)
1/2 cup cucumber
4 large to extra large eggs
1/4 cup 8th Continent Soymilk
a pinch of salt
1/4 cup lowfat cheddar cheese
Melt heart healthy margarine substitute in frying pan and then add vegetables.
Cook until vegetables are tender.
Mix eggs, 8th Continent Soymilk and salt together in glass mixing bowl.
Pour egg mixture over vegetables in the frying pan.
Cook, without stirring or moving, until the edges are solidly cooked and the center of the omelet is nearly set.
Place grated cheddar cheese over the top of the omelet.
Cover the pan and allow the cheese to melt. This will not take long.
When cheese is melted and omelette is set you can slide onto your plate and enjoy!

So
the past few days I've been checking out the recipes on this website
and it got me thinking about one of my favorite treats when I was young.
Orange Julius at the mall!
I found a "copy cat" type recipe online and decided to try it out
with 8th Continent Complete Vanilla in place of the regular milk.
It tasted just how I remembered!
Here it is:
6 oz of frozen orange juice concentrate
1 cup 8th Continent Complete Vanilla soymilk
1 cup water
1/4 cup granulated sugar
1 tsp vanilla extract (or flavoring) use more or less to your specific taste
8-10 ice cubes
Blend all ingredients (except ice) in blender on high. Then add ice
cubes one by one until the consistency is to the thickness you like.
This portion makes about 2 large servings.
Of course feel free to jazz this recipe up as you like such as
adding other fresh fruits like pineapple, bananas, strawberries, etc.
I'm trying to remember all of the different flavors Orange Julius
offered back in the 80's. :-)

In a blender, blend together:
2 cups of 8th Continent Light Chocolate Soymilk. 1 1/2 cups of frozen strawberries. 1 Tbsp of ground flax seed (optional)
Makes two servings (or one if you want it all because it totally tastes like chocolate covered strawberries!)

Ingredients:
1 cup 8th Continent soymilk 1 shot Kahlua 1 shot Bailey's Irish Cream 1/2 cup coffee Splash coconut rum 3-4 squares milk or semi-sweet chocolate 3-4 ice cubes to taste
Instructions:
Add everything and blend!

One serving of this hearty, toothsome oatmeal provides many
nutrients—both soluble and insoluble fiber, iron, calcium and folic
acid. Refrigerate leftovers to reheat another day. Microwave on High 1
to 2 minutes until hot.
Bake Time:
45 to 50 minutes

Ingredients:
2 2/3 cups old-fashioned oats
1/2 cup raisins
1/4 cup real maple syrup
2 teaspoons ground cinnamon
1/4 teaspoon salt
4 cups 8th Continent® original or vanilla soymilk
2 medium unpeeled apples or pears, chopped (2 cups)
Additional soymilk, if desired
Chopped toasted walnuts, if desired
Instructions:
1.
Heat oven to 350°F. Spray 2-quart casserole with cooking spray. In
casserole, stir together oats, raisins, syrup, cinnamon, salt, soymilk
and apples.
2. Bake uncovered 45 to 50 minutes or until most of liquid is absorbed.
Pour additional soymilk over each serving; sprinkle with walnuts.

This refreshing smoothie makes a great breakfast, lunch or snack.
With 89% of your daily vitamin C, it's also great for staying healthy
in the cold and flu season. Note also that 1 serving offers 25% of
your dietary fiber as well!
Ingredients:
1 T. flaxseed 6 ice cubes 3 T. lime juice 2 bananas 3/4 C. frozen blueberries 1 1/2 C. vanilla soymilk**(see nutritional note) 1/2 C. orange juice 2 scoops of protein powder (optional)
Instructions:
Grind flax seed in blender. Add all other ingredients and blend until smooth. Pour into glasses and serve. Please note protein powder is not included in the calorie/nutritional information because it is optional.

How about a cozy, warm vanilla caramel drink? Substitute vanilla soymilk for the chocolate.
Number of Servings:
2 servings (1 cup each)
Ingredients:
2 cups 8th Continent® light chocolate soymilk
2 tablespoons fat-free caramel topping
Frozen (thawed) fat-free whipped topping, if desired
Chopped pecans, if desired
Instructions:
1.
In 1-quart saucepan, stir soymilk and caramel topping until well
blended. Heat over medium-high heat, stirring frequently, until hot.
2. Pour into 2 mugs. Garnish with whipped topping and pecans.
