LEMON & POPPYSEED COOKIES
½ cup raw sugar
2 tablespoons softened soy margarine
½ teaspoon natural vanilla essence
pinch of Celtic sea salt
1 teaspoon lemon zest
2 tablespoons lemon juice
½ cup desiccated coconut
1 tablespoon poppy seeds
¼ cup fresh soymilk
1 cup gluten-free self-raising flour
Set oven to 160 C.
Mix soy marg into sugar.
Add vanilla, salt, zest and juice.
Stir in coconut, poppy seeds and soymilk.
Add flour and mix until well combined.
Roll into rounds and flatten.
Bake on a greased tray for 15-18 minutes.
