For posterity's sake:

will you be going new-wave confit? or old french-style a la Antonin Careme aka centuries ago technique???

as well, does the slaughter of said pig go from scratch as in kill, drain, and process? or do you just get the "cadaver"??
I would suggest doing it traditionally... Like a proper Charcutier... Waaaaaaaayyyy more satisfaction, in a "hard-day's-work" sort of way.... Morbid, but true. I think every meat-eater should have to kill what they eat at least once in their lives.... At least....

The key to good toffee is avoiding crystallization... brush the sides of the pot with water as the sugar reduces.... and use a candy thermometer, if possible, unless you wanna go really old school aka centuries old technique where you drop it into cups of water to check the "stages" ie, soft ball, hard ball, soft crack, etc... Good fun, sugary stuff is... and don't dip your finger to taste, eh!!!!

deep tissue massages hurt like hell, but in an alluring masochistic way... Honestly, thay just hurt fucking good... addicting, to say the least...

Send me your address and you'll get a surprise for Xmas.. *hint* it's on your list *end of hint* -- think of it as a scratching of your back for the postcard...

Lastly -- for now -- how ya gonna do your lamb???

I could go on, but.....
