I took this clip out of an acticle called Pickey Eaters can bite me by Judith Woods in the Pretoria News.  I think this is important to note for me that I have Multiple Chemical Sensitivity and the closer I can get to Organic foods and chemical-free products in my life the less symptoms I have.  The arcticle goes on to say and I quote-

 "Just when did we all get so hung up about food? As the arguments over food labelling rumble on, society has become polarised as never before. At one end of the spectrum we have rampant obesity, with whole sections of the population gorging themselves to an early grave. On the other, we have anorexics, starving themselves below size zero. And then we have the orthorexics, a growing section of society whose fastidious preoccupation with the purity of their food has led to their being given their own eating disorder category: orthorexia nervosa." "For orthorexics, a fixation with what they eat becomes an all-consuming lifestyle," says Dr Alex Yellowlees, medical director of the Priory Hospital in Glasgow, Scotland. The term orthorexic comes from the Greek ortho, meaning straight and correct, and was first coined in 1996 by Dr Steven Bratman, the American author of Health Food Junkies: Orthorexia Nervosa. Other eating disorders focus on quantity of food, but orthorexics are solely concerned with quality.

I guess I have to say that is kind of me in a nutshell.  Although we do eat "junk food" like burgers, the kids are allowed to eat sweets and treats but understand the importance of a healthy diet to ensure growth and development.  My junk food is the occasional jelly beans once in a while.  I have removed all meat except cold water fish from my diet and all dairy except for the homemade yogurt I make.  I only eat whole grains and nothing that is white, like white sugar of flour. I still serve the kids foods that they like.  The orthorexia is mine and mine alone.  Just some thoughts on a beautiful day in the great southwest.

whoever said that is full of it. i think that we would all be better off with less chemicals in our food. and nutrition is important to every one. i personally would much prefer to pay a little more for better food than alot more for doctors bills and cronic conditions caused by bad food.

i noticed that you said you are pretty much vegitarian. i have heard that we all need animal protein and fat to nourish our bodies. grains are mostly devouid of nutrients and serve only to provide quick atp. i love home-made yougut though! and burgers can be healthy, if they are made with good meat (organic, no preservatives or flavourings, ect). if you want to, i would love to talk with you more about nutrition.

Hi Kelsey, the one thing that is important is to decrease the inflammation in our bodies. Pork and beef are high in arachionic acid and toxins. Arachonic acid is an essential amino acid which deals with pain and inflammation. Reducing the injestion of arachonic acid has a similiar affect of what a non-steriodal anti-inflammatory drug does in the body without taking the drug. We are allergic to pork and soy and eat limited organic beef and occasionally bison (of course that was about 3 weeks ago.) which does not contain high levels of the arachionic acid as does our normal steriod/antibiotic injected cattle. The kids are not dealing with the same inflammatory response that my husband and I are and therefore they can eat just about anything that is mostly chemical free. Inflammation is linked to many chronic diseases and an anti-inflammatory diet really helps decrease the symptoms. We are also allergic to chicken and turkey and have bad reactions with both those. We stick to a 40% carbs, 30% protein and 30% healthy fats. If you want to look up more information on the anti-inflammatory diet go I recommend the inflammation cure by Joel Meggs MD PhD. It is very informative. I hope that I won't have to stay on this diet forever but when my symptoms are horrible it really knocks them down alot with adequate rest and exercise.

wow, idk what i would do without chicken and pork, that seems to be what my diet mostly consists of! (well, that and eggs) interesting how we need different dietary requirements to help our body heal. you are on an anti-inflamitory diet, while i am on a nutrient-dense diet to help my body recover from all the assaults on my system. it make sense though, even though we process food in generally the same way, we have different needs. what matters is that the way you eat makes you feel better.

So well put Kelsey. I love heaing about health and nutrition. I have to tell you for my hubby his symtoms have gotten so much better without chicken, eggs, milk, soy, pork and even turkey. He can handle being at work much better. He has increased his exercise with the healthy eating and it seems to be working great. Tonight is broiled salmon, yams and aspargus, can't wait.
