My Aunt Edna's Thanksgiving Cole Slaw

  Amount  Measure       Ingredient -- Preparation Method

     1/2  head          Red cabbage -- Sliced 1/4" thick
     1/2  head          Green cabbage -- Sliced 1/4" thick
   2      TBS           Salt
     3/4  Cup           Sugar
     1/2  Cup           Red Wine Vinegar
   2                    Eggs
 
Cabbage preparation:
Cut and use half of each cabbage head. (If use whole heads, double sauce recipe.)
Cut ½ of each cabbage into long, coarse shreds
Sprinkle 2 Tbs of salt over cabbage
Let stand for 15 minutes
 
Sauce:
In medium-sized sauce pan mix:
3/4 cup sugar
½ cup apple cider vinegar
Stirring constantly, pour into mixture, 2 well-beaten eggs
Cook mixture over medium-low heat, stirring constantly
until sauce thickens, about 10-15 minutes.
Let cool
Pour over cabbage and mix well.
Chill for a minimum of 2 hours
Remix sauce and cabbage prior to serving

NOTES : This slightly tangy, sweet-sour slaw is an excellent complement to heavy Thanksgiving dinners. This recipe has been orally passed down through the Link, Brown and Lam families of Virginia.
