Ah the days I get a wild hair...
. I decided it was time to test my cooking chops. I cooked an ocean of fish over Christmas pretty much from memory - but apparently that wasn't challenge enough.
I decided to glove bone a chicken.
Glove boning means you remove all the bones from the bird except the drumsticks and wings (so they hold their shape). Every other bone is gone - including the thigh bones.
I made a cornbread stuffing with leftover corn bread from New Year's. (Got to hone my cooking chops AND use leftovers!) In order to keep the stuffing intact when the bird was carved, I had to add an egg to the stuffing.

Here's the bird, roasted, with the onions, stock and wine I put in the pan. I made a pan sauce with that while the bird was resting.

The other items on the plate are sauteed broccoli and cinnamon apples. And that slab of crunchy bread is garlic toast. (As you can see, I like mine nearly burnt.)
It was a really nice dinner and now we have lunch for tomorrow!
