So due to crazy circumstances, Chris and I chose not to save the top of our wedding cake. Well, I like traditions, so I was kiind of bummed not to have cake to eat on our 1st anniversary, so I decided to remake the cake the best I could.
The cake was Devil's Food Cake with Kaluha Mousse and Buttercream frosting. I didn't use any recipes from the cake bible this time, and I did have some help. I made the cake with no problem. I made it on a sheet pan and cut circles, but I do wish I had made the cake a little thicker. For the mousse, I got a recipe from someone at work, and despite overwhipping my cream and making a 2AM run to the store for more, it turned out amazing! If you need a chocolate mousse recipe, this is a good & easy one!
Now the Buttercream was a problem...again. I don't know what happened this time, but my meringue wasn't working as planned, and I ran out of time, so my "Pastry Prince" at work saved me and whipped me up some buttercream. It was amazing and he totally saved the day!
Chris was thrilled with the cake and the thought and effort I put into it. It tasted great, probably 10 times better than a frost bitten year-old cake! I was happy with it as well, just a little frustrated with the bettercream incident...
