Some readers have asked if Crystal uses fresh jalapenos on her nachos, and the answer is yes, but be careful because fresh jalapenos tend to be much hotter than canned (you can cool them down by removing the seeds). Also, Crystal likes her nachos to be colorful, so she recommends using a mixture of yellow, blue, red and green corn chips. Here's how she makes them: line the oven-proof plate with chips. Sprinkle a mixture of shredded longhorn and jack cheeses over the chips. Place one slice of jalapeno in the center of each chip. Cover each jalapeno with a dollop of refried beans. That's the first layer. Enjoy a refreshing swig of Strongbow hard cider (Maxx cider would go well here too, but it's apparently only available in England)..... Build the next layer on top of the first – chips, cheese, jalapeno, beans. Sprinkle some salsa over the top. Place in the oven and bake at 400 degrees for about 10 minutes. Enjoy with more Strongbow hard cirder.
