Green Tomatillo & Sunflower Seed "Cheese" PIZZA
Tomatillo Pizza Sauce: About 10 or so Tomatillos 1 Large white onion 3 cloves garlic Oregano 1 Large Green Chili (like the kind used in Enchiladas)
Pizza Toppings: About 4 or so Roma Tomatoes 2 bunches of Cilantro
"Cheese": Sunflower Seeds (without shells, trail mix style) 2 garlic Cloves 2 lemons
Pizza Crust (aka Vegan Pie Crust): 3 cups unbleached or whole wheat flour (or any mixture of the two) 1/2 cup oil, extra virgin olive oil is preferred 1/2 to 1 cup water, distilled preferred 1 & 3/4 teaspoons salt
MAKE THE PIE CRUST: (this part from www.veggiecooking.com)
Measure flour and salt into large bowl. (NOTE: Use a little less salt for 100% whole wheat flour.) Add oil, then mix with a fork or pastry blender, cutting flour-oil lumps apart until mixture resembles coarse sand.
Add 1/2 cup water and stir into the flour mix. Dough should be moist enough to shape into a large ball, yet dry enough not to stick to your hands. If needed, add more water, a tablespoon at a time, until this consistency is reached.
After shaping dough into 1 large ball, roll with a rolling pin on a floured surface until roughly 1/8" thick. Or just use your hands :) Place on Pizza Stone or Aluminum Foil over Cookie Sheet, make indents for Pizza Crust.
Prick the crust with a fork approximately every 2 inches to avoid bubbles.
Tomatillo Sauce: Peel, Wash, Sing songs, Half the Tomatillos Throw them in the Blender and mash em up
Put garlic in saucepan, saute and add onions, add oregano to your taste and till it smells GOOD, add green chili and then add mashed up tomatillos, you could add oregano again... Keep on med heat for about 10-20 minutes till most of the water is gone
Put Tomatillo Sauce over you pie crust, throw it in the OVEN!!! Bake in a preheated oven at 400 F for 20 minutes or until the crust starts to brown or 350 for 30 minutes.....
CHEESE: Take Sunflower Seed and Garlic and Lemon Juice and think positive thoughts as you blend it to a nice and creamy consistency. salt and pepper to taste....

Add Diced Roma tomatoes and cilantro LIBERALLY like seriously WHY NOT!!! and then put on the magical cheese in nice dollops or spread it out evenly if you're up to it
