Gary's "Cooking is Easy" recipe 1

Cheesey Kicked Risotto

Igredients
1 shallot
1/2 clove of garlic
Shitaki mushrooms
Baby bella mushrooms
2 tblsp Olive oil
2 tblsp Margarine
1/2 cup of risotto rice
1 1/2 cups of water
1 tsp of chilli powder
1 tsp of black pepper
1/4 tsp of cayenne pepper
Shredded mozzerella cheese

Note: If you don't like mushrooms, you can replace with red pepper

Make the spiced water:
Add the chilli powder, black pepper and cayenne pepper into the 1 1/2 cups of water.  Stir until disolved

Start the risotto
1. Dice the shallot, garlic cloves, and both types of mushrooms
2. Heat the olive oil and margarine in a large saucepan
3. Saute the shallot and garlic until the shallot is transparent
4. Add in the mushrooms and cook for 2 minutes
5. Add the rice and stir for 2 minutes
6. Add the spiced water and bring to a boil
7. Reduce heat to medium and stir until the liquid is absorbed
** Note, if you increase the size of the recipe, add additional water 1 cup at a time.  Always start with just 1 1/2 cups **
8. When water is absorbed put in 2 handfuls of shredded cheese.  Stir until mixture becomes cheesey and gooey


The risotto comes out fluffy, and the mushrooms well integrated.  The cheese adds a sense of comfort food to the dish (making it easy to eat alone if you like), and the spices of the water add a round heat that encompasses your mouth without leaving you crying in your dinner.
