We love the smoked turkey legs that are usually sold at the various Renaissance Faires across the country.  And we have tried to duplicate their method of preparing this delicious treat with varying degrees of success.

Many times our turkey legs have turned out too tough, or lacking that spiciness that we love.

 

But finally, after much experimentation, my wife, Dr. Elizabeth, has come up with a method that produces the wonderful turkey legs exactly like those at the Renaissance Faires.


Dr. E. has consented for me to share her method with my readers. 

 

Ingredients:

2 large smoked turkey legs (we like the Nebraska® Brand sold by Giant Foods)


For the marinade:


1/3 cup white vinegar

½ tablespoon ground chipotle pepper

1 teaspoon garlic powder

1 teaspoon fresh-ground black pepper

splash liquid smoke (hickory)

¼ cup water


For cooking the legs:


½ medium yellow onion, sliced thinly (1/4-inch)

heavy duty aluminum foil


Method:


Mix the marinade ingredients together and place in a gallon-size Ziploc® bag. 

Add the turkey legs.


Remove as much air as possible, zip up and marinate for 6 hours.


Remove from the marinade and wrap in heavy duty foil, placing the marinated legs on top of the sliced onions.


Bake at 300º F. for 1 hour (I put the foiled package into a broiler pan in case it leaks).


Raise temperature to 375º F, and bake for another 30 minutes.


Remove from oven, unwrap the legs, and let rest for 10 minutes.


Serve on a heated plate.


There are scores of sides that complement smoked turkey legs.  Some of our favorites are:

·        Buttered egg noodles, sprinkled with fresh-grated Parmesan cheese

·        Southern style greens (collards, spinach or kale) & cornbread

·        Green beans and new potatoes

·        Ranch-style beans with a bit of jalapeno pepper

·        Chipotle-buttered fresh corn on the cob

·        COLD DRAUGHT BEER!
