A Good OUL Dublin Coddle- by the fade street bums
Loved by some, hated by others, and virtually unknown by the upper classes, coddle is thee traditional dish of Dublin.
A very easy meal to make, and can feed an entire army in just about an hour of cooking.
Ingredients:
1 lb of ham chunks 1 lb of butchers sausages carrots potatoes lentils
Method:
Basically place all of the above into a large pot with enough water to cover. Only put a few spoons full of lentils in, and be careful that the potatoes don't start to become too mushy as this can make it quite thick (or maybe hats what you want).
Cook for a little under an hour, checking that the ham chunks are cooked right through.
Serve in a bowl with a little black pepper on top, and thick cut buttered bread on the side for dippin'.
Coddle is also Tastier the day after you make it!! so if you do have any left keep it for lunch tomorrow, you will not regret it.
