September 18th is Chilean Independence Day...From wikipedia:
The drive for independence from Spain was precipitated by usurpation
of the Spanish throne by Napoleon's brother Joseph in 1808. A national
junta in the name of Ferdinand—heir to the deposed king—was formed on September 18, 1810.
The junta proclaimed Chile an autonomous republic
within the Spanish monarchy. This event is commemorated on
Chile's National Day on September 18. A movement for total
independence soon won a wide following. Spanish attempts to
re-impose arbitrary rule during what was called the "Reconquista" led
to a prolonged struggle.
Well, it's a big deal in my family as my folks are both from Chile. Soo, I
had to call mom and dad today and wish them a "Happy Independence
Day." I went to Mom and Dad's for dinner and had some Pastel de
Choclo and some delicious Chilean Red wine. Mmmmmm deeelorcious! Here's the recipe: (but don't tell Mom) http://www.nuevoanden.com/recetas/recpastel.html
I love it, it's great food and we raise our glasses and say "Vive Chile Mierda."
If you don't get it. Sorry, just know that it's cool!
