Take 3 large beets. Chop off the ends and peel. Cut in half and put in a pot. Cover with water and add a 1/4 cup balsamic vinegar, a tablespoon salt, 5-10 whole cloves, 3-5 bay leaves, and a small handfull of whole peppercorns. Bring to a boil and reduce heat to medium. Cook uncovered adding water as necessary to keep beets just barely covered. Cook for about 45 minutes or until you can insert a fork without too much effort. Drain in a collander and when cool enough to handle slice and place in a bowl. Drizzle with about another 1/4 cup balsamic vinegar. Excellent by themselves or on a salad.
