A summer of baking and eating many pies seems to cause a girl to expand a bit. So I've been on the South Beach diet for the last month or so. The first 2 weeks were pretty strict and fruit and grains were off limits. But now I can enjoy them again and came up with this tasty (and healthy!) recipe for an Apple Oatmeal Crisp:
Preheat oven to 375 F
Thinly slice 6 apples (leave the skins on! they have all the fiber!) I like Gala apples for this but use your favorites. Toss with 2 tablespoons of granulated Splenda, one teaspoon of cinnamon, 1 teaspoon of vanilla and a pinch of salt. Arrange them in a pie plate or glass baking dish.
In a food processor pulse together 1 cup of old fashioned oats, 1 cup of granulated Splenda, 1 tablespoon of cinnamon and 4 tablespoons of melted butter/margarine. It should look crumbly. Sprinkle evenly over the apples.
Bake for 35 to 40 minutes until the fruit is tender. This is also awesome with pears! Mmmmmm!!!!
