its been pretty much eight months since i posted anything on here... where the hell has the time gone?
i do see that i have had 45 views this week for my gaia posting which i didnt realise was gonna be a blog but whatever... lol
so here goes...
This is a chat with a guy we will call freakshow who was recently on my myspace... and now no longer is...
i went off on him tonight.
we started chatting a few weeks ago... and our first phone call turned to sex... his bf had just dumped him and i think he was trying to make him self feel better hoping to get a rebound lay... which usually i have no issues with this... but something about this kid jsut kinda made me steer clear...
he has since gotten a bf... but told me we could still have sex and he would jsut tell his bf it was set up from before... which is odd to me... but whatever... i had no desire to fuck this kid...
and one of the main reasons... was that once it was initially discussed... thats ALL HE FUCKING TALKED ABOUT... everytime he was on the phone he would ask me to come over and fuck him. or make not subtle advances such as
Me: hey ander and i are gonna get get something to eat, can i call you back? Him: oh you wanna come eat me? Me: huh? (thinking i had misheard him) Him: i think you shoudl come eat me.
see what i mean? throwing himself at me... not a turn on... its all apart of the chase people...

and after wild wings tonight jhoe wanted to go listen to a program on NPR about some comic strip artist..
25 minutes of his flipping through stations before they found it... 20 minutes of that was listening to stations in hopes to find a station id so we would know where we were...

I was working at Uno's a few years ago at the Williamsburg location.
They specialise in pizza and they have a fun was of doing it. For the pepperoni pizzas they put the pepperoni underneath the cheese so it wont burn or get crispy. Its a great idea, but they can look a lot like the cheese pizzas. Especially since the sauce they use is very chunky.
I had a four-top that came in. Two older couples, and they were just as nice as they could be. They all ordered, one lady smiled as she ordered her Cheese Pizza. She was so excited as I was informed of the anticipation for said pizza. It had been quite awhile since she had eatn Uno's Pizza and was every excited to be having it again.
I put the order in and some time passed. When the order came up I ran it out to the table and everyone dug in. It was all delicious.
I went back to the window to find a fellow server standing there impatiently. Mark was waiting on his Pepperoni Pizza to take to his table. There was a cheese sitting there and the cooks were informing him that both had been placed in the window.
When you are busy, its an easy msitake to make. But hey, no harm no foul. I apologised to Mark and the cooks and took the full blame. I grabbed the Cheese Pizza and took it out to my table and admitted my mistake.
The lady commented that it did have a weird taste that she couldnt place.
"Oh Ma'am it's Pepperoni. You can't tell me you've never had pepperoni before!" I exclaimed with a smile.
"This is Pepperoni? Seriously? I ate Pepperoni?"
Her lack of jovaility made me wonder if it was against her religion. Apparently eating meat was.
"I am 72 years old and I have never eaten meat in my life."
I fed meat to a vegetarian. If i would have spent 1 extra second checking the order over before I brought it to the table, then this woman's dream of never harming a living animal for food would have easily been acheivable.
This was easily 3 years ago... And I still feel very bad about it.
Does that say anything about me?

OK guys... you know about my weakness for Mexican food by now. I have been craving Chimichangas for awhile now, and while rumaging through my cabinets I realised I had EVERYTHING that I needed to make them myself.
A Chimichanga is just a fried burrito. Typically deep fried, but this is slightly healthier. You will need:
Flour Tortillas Boneless Skinless Chicken Breast 1 small onion, diced 1 small tomato, diced 1 small green pepper, diced you can just use 1.5 cups salsa to save money :) 2 tbsp frsh diced cilantro 8 banana pepper rings, minced 1/4 cup roasted green chilis 1/2 tbsp chopped garlic 2 tbsp cumin 1 tbsp oregano S&P 2 Cups chedder Cheese
Ok Guys... this is a little more time consuming. BUT its sooo worth it! And can easily feed four people for the cost of feeding one at a mexican restaurant.
Cube the chicken and toss into a pot with everything BUT the cheese and tortillas. Cook for about five minutes uncovered with about a half cup of water and a touch of oil. Once the chicken starts to change colour you cover and let cook for about 45 minutes** over medium high heat stirring about every ten minutes.
When its done, pour onto a plate or board and grab some forks and break up the chicken.
Grab your tortillas. Stuff with chicken mixture, I put two slices of avacado in each one, and cheese and fold over to close fold side down.
Fry them in a bit of oil and butter to brown them. Start it fold side down to seal it closed for about 2-3 minutes on each side.
**Serve with a queso cheese sauce on top, or salsa if you prefer, or nothing at all. You can serve with refried beans and mexican rice, both of which I did. I used the instant stuff. This can be prepared while you are making the chicken.
Extra sides. Salsa, Guacamole, sour cream. IF you wish.
For the Queso.
1 cup Asadero Cheeese, can be found at walmart. 2 tbsp green chilis 1/4 milk 2 tbsp minced onion 2 tsp cumin 1/2 tsp salt
Place into small pot and Bring to a gentle boil over medium heat. Won't take more than a few minutes. Also makes a great dip. If you wanna make before hand and just nibble while cooking. Or double the recipe and serve with tortilla chips for that authentic Mexican Restaurant experience.

Yummy appetizer great with Ritz crackers or my own Parmesan Rosemary Crackers. THat is a later recipe though... hehe
You will need:
1 package of crab meat*, you can use the claw or the rest. 1/3 cup each Onions, Celery, Carrots, all diced. 1 cup breadcrumbs. I used a bag of Cheese and Garlic croutons I had on hand. EVOO 1 tbsp Ole Bay Seasoning 2 Eggs 1/4 cup each mayo and sour cream one block of cream cheese, room temp Drawn Butter**, about 4 tablespoons. (optional) 1 lemon, wedged S&Ptt
Saute the veggies in the evoo with a touch of salt until the onions are transluscent. Set into a large plastic mixing bowl. Add Mayo and Sour, eggs, S&P, the bread crumbs, and crab meat. Mix very well.
Place the cream cheese in the center of your baking dish, I used a pie pan. Surround the brick with the crab mixture. Pour the drawn butter on top at this point. Sprinkle with Ole Bay Seasoning. Slide into the oven and bake at about 325 for about 30 minutes.
Serve with the lemon wedges and crackers of your choice.

*Dump out crab meat and drain. Always be sure to sift through your crab meat personally. There is always a chance of a bit of shell.
**Make Drawn butter by heating up the butter in a double boiler.(A glass bowl set atop a small pot of boiling water.) Let the excess rise to the top, its the white bits, and then you scoop away and discard.

This is a really yummy southern favourite with a slightly lighter twist. And great for lunch.
You will need:
3 Chicken strips Flour for breading Paprika, Salt, Pepper, and oregano, ground up to mix in with flour. Romaine Lettuce Sunflower Seeds Julienne Carrots Diced Red Onions Chedder Cheese, shredded Julien Tomatoes Your dressing of choice. A parmesan peppercorn ranch would be nice. Or pairs great with a mustard vinagarette.
This is so simple and delicious you are gonna be amazed.
You roll the chicken in the breading mixture. You deep fry it for about 3-4 minutes, until golden brown. Slice it up. Add everything to the plate. That's IT!
You can arrange it however you want. Add anything else, leave things out. Its totally up to you. This salad runs 7-9 bucks at most restaurants, and I can make it for less than 3. And it only takes about ten minutes from breading to eating.

This one isnt really for eating alone, but more for eating on your burgers and dogs. It makes a large amount... but feel free to cut it in half, or even 1/3.
You will need:
2 quarts of water 3 LBS of hamburger meat. one medium onion, diced small. Chili Powder, S&P, to taste. 1 cup ketchup 1/4 cup Brown Mustard.
Put the water on the stove and add in the hamburger meat. Get your hands in before you turn the heat on, and really break up the meat, you want small bits. Crank up the heat and start it boiling. Add the diced onion and let it boil for about fifteen minutes, Until you have browned the meat throughly. You are gonna have some big gnarly looking bubbles, but its all good, just stir them in.
Add the chili powder, until you get a nice rich colour, about five to six tablespoons will typically do it. Let it boil for about another fifteen to twenty minutes. Then add the ketchup and mustard. You can use yellow, but the brown really adds a nice flavour to it. The add your salt and pepper and just cook it down. Takes about 45 minutes total if you keep it on high. Once it is cooked down, you should always give it a taste test. This is the best time since you have removed most of the water at this point.
Dress your burgers and dogs with this and make them extra delicious!
This also freezes perfectly for up to three months. If you make a BIG pot of this at the beginning of summer, you will be set for the rest of the grilling season! Just freeze in smaller portions.

Hey guys... I've been wanting to try these for awhile, and they worked out really well.
They are usually made with hamburger and rice, but i tried it with just a half a cup of breadcrumbs and parmesan. It worked out really well.
You will need:
2 peppers, medium 1 chicken breast, grilled and chopped. 1/4 cup pico de gallo, recipe follows. 1/4 cup breadcrumbs 1/4 cup powdered parmesan S*P Shredded Cheddar Cheese to top.
Slice the top off the pepper and hollow them out. Place in a 300 Degree oven for about 20 minutes. Open top side up.
Pull them out, pour out the water, and sprinkle in a few dashes of S*P shake to coat, then back in the oven for another 10 minutes.
While all this is going on, grill a chicken breast with a bit of taco seasoning. When done, pull off and grab some knives or a clever, and start chopping into bits.. put on paper towel, you want it to be as dry as possible. Pat it down... all the way.
Mix with the pico de gallo, breadcrumbs and parmesan. It will be a very dry mixture. Very dry.
Pull out the peppers, and pour out any liquid. Stuff each with half the mixture, and cover with the shredded cheese. Bake for another 20 minutes.
Pull out and serve. They will have just enough residual liquid from the peppers to make them nice and juicy. It will be great. With an incredible flavour!

Oh yea! The Pico de Gallo recipe! It translates to Rooster Beak!
For a small amount.
1/4 small red onion. 2 roma tomatoes 1 tbsp cilantro 1 lime
Dice all finely, and mix together with the lime juice. It's a QUICK and SIMPLE addition to any mexican meal. Next time you are at a mexican restaurant, order this. You will get a small portion a third the size of this recipe for about 2/3 bucks. When its barely 2 bucks to make it all. Also, makes a great topping for Fajitas and Tacos that replaces cheese for less. And its a LOT better for you.

Hey guys! This is a really quick and simple dish... Can be eaten as a meal, but is typically considered a side... Also, its a request form my friend Jennifer that asked for a vegetarian dish.
I use Bacon Bits, for a bit of crunch, and of course for flavour. The ones i use are actually Imitation, and made from soy.
2 cups of pasta. I used Bowtie, but its up to you really. just something non stringy... it works best that way.
1/4 cup of sour cream 1/4 cup mayo S&P 1/4 cup Edamame, these are just soybeans. You can get the at the freezer section in your grocery store. Follow the directions to cook them. 1/4 cup chopped julienne carrots 1/4 cup chopped red onions 1/4 cup cubed cheddar cheese, small cubes... 1/4 cup bacon bits 1 tbsp Hidden Valley Rance Party Mix Powder. You can use regular ranch mix, but i love the party mix, just tastes better. and has a bit of salsa flavour to it.
Boil pasta, drain and blanch (this means submerge in cold water, it stops the cooking) then toss all together in a large bowl. You can work with the amounts as you wish.
Mix In Ideas: Diced Broccoli Cherry Tomatoes Zucchini Cucumbers Anything you want!
Serve and enjoy!
The edamame adds a nice touch, and fun colour. Not to mention it is INSANELY good for you.
If you need to add meat, then use Grilled Chicken, into cubes or strips, and make sure its tossed in when its cold. It needs to be cold. This dish can't be served hot. it separates.
