don't think i've posted any food-like er.. posts in a lil while, so here's something i made up on saturday that actually turned out pretty well. idea was to have something that tastes good to dip vegtables in. many of you have probably experimented with dips, but i really haven't. at all. which does seem surprising considering the other stuff i make. anyway, here's what went into it, use your own judgement for quantities..
1 cup (or more) full fat sour cream couple of tablespoons mayo. i prefer less than more 3 or so tbsp finely minced green onions 2 tbsp minced cilantro/coriander fresh dill to taste 2 cloves minced garlic (i used my microplane) .. use less garlic for less burn, but i like the taste 1/2 lime freshly squeezed 3 minced thai chilies (to taste) salt & fresh ground pepper to taste
mix everything by hand in a bowl, then let sit in the fridge for a few hours to let the flavours develop. measurements are approximate.. let me know if anyone likes it. i had it with radishes and carrots and cauliflower, but my friends put it on pita and loved it too.
i've been really really wanted to make thai curry for someone, but haven't figured that out yet.. this week hopefully.. hope everyone is staying warm

well, with about less than an hour on the clock, we managed to get our allotted share of christmas snow. apocalypse warning has been cancelled. perfect snowball snow too, since it was only zero out!
also, despite being boxing day, shopping seems the least likely task i would want to participate in at the moment. just finished shovelling the stuff, and it's pretty well all slush, making for the heaviest possible snow-shovelling next to shovelling shovel-fulls of water. that last sentence was brought to you by the word "shovel"
see what an improvement it makes??

first off, i guess happy holidays, seasons greetings, happy festivus, chanukah, xmas, whatever to anyone who actually reads these celebrates.. just thought since i don't really write down stuff anywhere else, here is as good a place as any..
so it's xmas day, the grass is greenish/brown and its above zero. for someone who's lived in Ottawa as long as me, I know when something fucked up is occuring, and this is one of those times.. never have i remembered a christmas without snow. i recall christmas' with very little snow, possibly snow atop freezing rain, but never NOTHING. it's friggin strange, let me tell you. yesterday (dec 24) got up to 10C above zero! it was sunny and warm, and felt more like a spring day than what is typically cold and at least white. i went on a bike ride too, which is also unusual, but i figured what the hell, why not do something i've never done on christmas eve, since the weather never allows it! it's been above zero and quite pleasant for most of this month, so if this isn't a sign of global warming, i reckon we have some messed up stuff to look forward to over the next many years..
anyone who's talked to me recently has known things have a been a lil bit crazy as of late, but everything's looking up and i'm hoping to end 2006 on a good note. hope to see some of y'all out at some point over the holidays, there's a subsonic reunion at the well.. i mean, helsinki this thursday (props to rob solo & company for getting this together).. also some dnb event @ babylon friday night, and who know's what for the new years weekend. peace

½ day 1 hour prep
Ingredients
- Place the oxtails in a large stockpot and add the water.
- Bring the water to a full boil, then reduce heat and bring water to a simmer.
- Scrape any scum off the top of the water and discard.
- Cut the onion in half and peel off the outer portion.
- Place on a baking sheet along with the ginger and broil in the over about 20 minutes, making sure not to blacken it.
- Turn over halfway through.
- Allow to cool.
- Place the star anise, cloves, cinnamon, and fennel seeds in a piece of cheesecloth and tie it shut with twine.
- Add the spice pack, onion halves, ginger, bay leaves, salt, and fish sauce to the broth.
- Allow the broth to simmer at least 5-6 hours (to your taste) uncovered.
- Remove the spice pack, onions, ginger, and bay leaves and discard.
- Remove the oxtails and set them aside.
- When cool enough to handle, remove the meat and trim of any remaining fat.
- Set the meat aside and return the bones to the broth.
- Allow the broth to simmer another hour or two until you achieve the desired taste then remove the bones.
- You may adjust the salt, but you don't want it too salty.
- Soak the rice noodles in COLD water 15-20 minutes, while starting a large pot of water boiling.
- While the noodles are soaking, place the cilantro, basil leaves, mint leaves, sliced onions, sliced scallions, and bean sprouts on a serving platter.
- After the noodles have soaked, place them in the boiling water and allow to cook until tender, but don't let them get mushy.
- It should only take a couple minutes.
- Rinse the noodles in cold water if not serving immediately.
- When ready to eat (you can do this earlier, like when you're boiling the water for the noodles) return the broth to a rolling boil.
- Place the noodles in a serving bowl and arrange the sliced meat (leftover oxtail meat if desired) over them.
- Ladle the boiling broth over the noodles and beef, making sure to cover the meat.
- Serve and allow each person to place the desired amount of garnish from the platter, hoisin sauce, and sriracha in their own bowl to taste.

Ingredients: Dough: 1/4 cup warm water (105 to 115 degrees F) 1 1/2 teaspoon active dry yeast 2 teaspoon sugar 2 cups flour 1/4 cup semolina flour 1 1/2 teaspoons salt 2 tablespoons olive oil 1/2 cup warm water Toppings: 1 4 ounce boneless, skinless chicken breast half 1 tablespoon jerk seasoning 1 tablespoon olive oil 1/2 cup slice shiitake mushroom 1/2 cup bottled barbecue sauce 1/4 cup (3/4 ounce) Asiago cheese, grated 1/4 cup (1 ounce) Mozzarella cheese, shredded 1/4 cup (1 ounce) Smoked Mozzarella cheese grated Mango Salsa: 1/2 ripe mango, diced 2 tablespoons diced red onion 1 tablespoon diced ripe tomato 1 tablespoon olive oil 1 1/2 teaspoons balsamic vinegar 1 teaspoon chopped fresh mint, basil or cilantro or mixture of all three Preparation: To Make Dough: In a small bowl, combine water, yeast and sugar and stir well to combine. Set aside for 5 minutes. In a large mixing bowl, combine flour, semolina flour and salt. Add olive oil to the yeast mixture. Stir well and add to flour. Add additional 1/2 cup warm water. Bring the mass of dough together until a compact ball is formed. Turn dough out onto work surface and knead vigorously for 7 minutes until smooth and satiny. Place a small amount of olive oil in a large bowl. Put dough in the bowl and turn it twice to coat. Cover bowl with plastic wrap and a kitchen towel. Set the bowl in a warm place. Allow dough to double in bulk, about 1 hour. Punch down dough and let stand for 20 to 30 minutes at room temperature before using. Roll dough into a circle about 10 inches in diameter, building up the edges slightly. Place dough on a pizza pan or baking sheet. To Prepare Toppings: Coat chicken with jerk seasoning. Heat olive oil in a saut pan and when hot, sear chicken on both sides. Remove chicken from pan, add mushrooms to pan and saut them for about 1 minute. Drain liquid from pan. Slice chicken into thin strips. To Prepare Salsa: In a small mixing bowl, combine and mix thoroughly all ingredients. To Assemble Pizza: Spoon barbecue sauce onto dough. Top with mushrooms and chicken strips. Sprinkle cheese on top. Bake pizza in a preheated 450 degree F oven for 7 to 8 minutes until crust is browned and cheese is golden and bubble. Garnish pizza with mango salsa as soon as pizza is removed from oven.

i guess i don't go out on weeknights anymore.. never really thought about it, until last night. funny, how going out and drinking on weeknights used to be a very common occurence, but i guess lately i've shifted to friday night, and possibly saturday too. actually, the easter long weekend was actually a lot more painful than i thought. figured, oh sure, i can go out and party on thursday, friday, saturday and possibly sunday, but man was i wrong. well, i guess i could have done it, but it would have broken me. 3 nights was plenty. thanks.
anyway, my buddy andrew decided to have a going-away party for himself last night, turns out that he's planning on spending the summer up at his cottage near sudbury.. everyone was a bit slow getting their shit in gear to get anywhere, but i guess that's what happens when you get 4 guys who don't really care too much about bar-punctuality together. the dom was really slow and pretty vacant when we got there, kinda playing some bluesy downtempo rock, until anthony went and asked for something heavier. everyone in the bar got instantly cheered up when they heard the slow fade-in opening rift of blackened from ...and justice for all. it was pretty cool actually, since i was listening to the album earlier that day. anyway, funny how old school metallica brightened everyone up, people playing air guitar, talking about 80s metal, slayer, iron maiden, tool ... well, that's not 80s.. i digress.
2 quarts of fiddy later, wandered over to zaphods where much to my surprise, it was packed!! funny, since back around 1997 i used to be there every single wednesday night and thursday night.. oh, and on weekends too. but wednesdays were the best night always, since you get to avoid the retardo jocks, and the whacked out 20teens who love HOT89.9 .. or whatever. the weekends there are silly.. long lines and it takes forever to get served at the bar. but it was actually a lot of fun! i ran into a bunch of friends from high school there too, which is always strange, but not that strange at the same time. ran into joel & christian, two guys who the last time i ran into them was at an Arrival party in montreal (dave clarke, space djz, stacey pullen).. the crowd was goood looking too. well, the girls were. i don't check out the guys, but i appreciate a bar full of hot girls. who wouldn't? so if anyone actually reads this, go check out zaphods on wednesdays, i think i'm going to try getting back there more..
